On 21 May 2021, the regular meeting of the Center for Innovation and High Technology was held at the Presidium of the Georgian National Academy of Sciences, which was dedicated to the innovative technologies that determine the export potential of the Georgian wine industry. Academician of the Academy of Agricultural Sciences, director of the Scientific Research Institute of the Food Industry Nugzar Baghaturia delivered a report. The speaker noted that the supply of European-type Georgian wines to European markets is unjustified, since the market is saturated with this type of wine. Emphasis should be placed on Georgian-type wines and alcoholic beverages, which have no analogues in world winemaking practice, and their quality and safety indicators should be brought to the level of international standards, which, in turn, would be impossible without the creation and dissemination of innovative technologies. Since Georgian qvevri winemaking method was recognized and listed in Intangible Cultural Heritage monuments, the interest in this type of wine has grown. As a result of the research carried out at the Institute, an innovative technology for making stainless white wines through the fermentation of the pulp was developed, which makes it possible to obtain stainless wines of the Kakhetian type. The peculiarities of Georgian white wine are completely preserved and, at the same time, the new variety of qvevri wine is characterized by a well-defined varietal aroma and taste, with a beautiful lemon color. The technology  of grape processing red grapes has also been developed, which makes it possible to improve the organoleptic indicators of the wine and make it equal in quality to expensive French wines.
